White beans with clams, a creamy and light spoon dish: simple healthy recipe

Put the clams in a container covered with water and a good handful of salt, about two hours before cooking, in the refrigerator. Chop all the vegetables into small pieces. Open the beans, drain and rinse very gently in a colander. Reserve.

Heat a stock of olive oil in a wide saucepan or pot with all the vegetables; Salt, add the bay leaf and stir a few times over medium heat. When it takes on a little color, add the saffron and a little water if necessary, letting everything simmer for 10 minutes. Pour in the wine, increase the heat and wait for the alcohol to evaporate.

Add a little more water, lower the heat and cover. Cook for about 15-20 minutes, until the vegetables are very tender. Remove the bay leaf and blend with the blender arm or glass, adding a few cooked beans – those that have broken down the most, for example – and a little more water to obtain a puree or fine cream.

Return to the pot and add the beans, stirring gently. Adjust the liquid level to taste, cover and let it simmer for about 10 minutes over low heat. Drain and rinse the clams, add them, season with salt and pepper, increase the heat and cover. Cook briefly until they opendiscarding those that remain closed.
