AROMA

Frédéric Granados and Damien Guillaumot created their bar specializing in world wines eleven years ago and their cellar six years ago. With 600 references from 40 countries, they offer a complete tour of the major international vineyards, from Europe to the Middle East via the New World, China and Japan. “It was a gamble,” notes Frédéric, responsible for the cellar part. But many people are curious, and many foreigners who live in Lyon are happy to introduce their French friends to their French wines. » The cellar also offers a choice of spirits, rums, whiskeys and gins. At the bar, customers have the choice between 24 wines by the glass which change every week. Please note, two Thursdays per month, tasting workshops by reservation.

THE PRESS

A trained oenologist, Jean-Yves Deyras has explored the world of wine, from production to sales. In 2019, he decided to take over a cellar. “I wanted to promote my experience to customers. » He selects his wines from winegrowers. Its range – 1,000 references, from €6.50 to €750 – is made up of French and foreign wines and a wide choice of spirits. “I offer organic wines but not only. I first sell the wines that I like,” explains Jean-Yves, who does not hesitate to promote wines from cooperatives, such as those from the Viré cellar, in the Mâconnais. In terms of entertainment, it organizes “open days” with an oenologist or a winemaker on Saturday afternoons and themed evenings.

AT THE NECK

Antoine Frisch is the example of a successful reconversion. “I was a lawyer; wine was my passion. » It was in 2017 that he joined a Parisian cellar. When his wife had a professional opportunity in Lyon, he followed her and opened his cellar in July 2019. “The year 2020 was special, it was the Covid period. I took a tour of France’s wine-growing regions to adapt my selection to the Lyonnais. » Its range is made up of wines from all over France with a predominance from local vineyards, mainly small organic, biodynamic and natural estates. “I work on my favorites: at the moment, the Loire and the Beaujolais. There is Gamay in common, a tone that appeals to the Lyonnais. I also have around fifty gins and as many whiskeys. » A tasting workshop is offered every week.

THE THIRD RIVER

Vincent Dechelette has made Beaujolais his specialty: “I started in the Vaise district before opening a second cellar in the center, in 2019. Beaujolais has long been assimilated to Beaujolais Nouveau, with a caricatured image. But there are very good new Beaujolais, you have to go to serious winegrowers. In the vintages, I particularly like Morgons for their aging potential and Fleuries for their finesse and fruitiness. » The wine merchant also offers grape varieties from the Rhône valley with little nuggets for less than €10. He organizes tastings with winegrowers and offers tailor-made evenings at home.
