If you’re looking for a dish that will comfort you on cold fall days, I’ll show you my favorite recipe with pumpkin for dinner: rich in proteins, low in carbohydrates, comforting and light at the same time.
Pumpkin and cheese cream
Against only five ingredients and using seasonal pumpkin we can prepare a pumpkin and cheese cream Full of protein, calcium and vitamin D, but very low in carbohydrates.
We need four people: one onion, 700 grams of pumpkin, 500ml of vegetable broth, 200 grams of cream cheese and 20 grams of blue cheese, You can add salt, ground black pepper, nutmeg, cumin or whatever spice you like best for flavor; and in a certain sense topping various seeds.
we’ll get started peel and finely chop the onion, then brown it the same in a pan with a little hot extra virgin olive oil, for about five minutes.
We peel and cut the pumpkin into cubes removing the seeds beforehand, and adding them to the previously fried onion.
We mix and cook for another five minutes and then incorporate the aromas we like most, In my case I used nutmeg and dried oregano in addition to ground black pepper.
Let the spices heat up and then Add the vegetable broth and cook for another 20 minutes. over low heat.
Remove from the heat and let’s crush until you obtain a smooth cream for later add cream cheese and put it back on the heat to bring it to the boil while mixing well. Serve hot with a few pieces of gorgonzola and various seeds.
This pumpkin and cream cheese spread is my favorite fall dinner: comforting, satisfying, and very nutritious; full of quality proteins and with a low carbohydrate intake, to be prepared in a short time to be enjoyed at the end of the day.
