Unprocessed Diets Trigger ‘Nutritional Intelligence,’ Study Finds, Leading to Lower Calorie Intake

A shift to a diet centered around whole, unprocessed foods may not require strict calorie counting, according to new research. Instead, it appears to activate a natural “nutritional intelligence” that guides people toward consuming larger volumes of fruits and vegetables while simultaneously reducing overall calorie intake.
A groundbreaking study led by researchers at the University of Bristol, with contributions from leading US nutrition experts, revealed that participants eating only unprocessed foods consumed over 50% more food by weight compared to those consuming ultra-processed foods (UPFs). Despite this increased volume, their average daily calorie intake was approximately 330 calories lower. The findings were published in The American Journal of Clinical Nutrition.
The Power of ‘Nutritional Intelligence’
The research suggests humans possess an innate ability to balance nutritional needs and energy intake, a capability that functions optimally when foods are in their natural state. This instinct, however, appears to be compromised by the prevalence of modern, highly processed food environments.
“It’s exciting to see when people are offered unprocessed options they intuitively select foods that balance enjoyment, nutrition, and a sense of fullness, while still reducing overall energy intake,” stated a lead researcher. “Our dietary choices aren’t random – in fact we seem to make much smarter decisions than previously assumed, when foods are presented in their natural state.”
Re-Analyzing a Landmark Study on Processed Foods
The current findings stem from a re-examination of data from a significant clinical trial spearheaded by Dr. Kevin Hall of the US National Institutes of Health. The original study demonstrated that diets consisting solely of ultra-processed foods contribute to overeating and weight gain. This new analysis sought to understand why individuals consuming only whole foods ate larger portions yet maintained a lower calorie intake.
Participants adhering to the unprocessed diet consistently prioritized fruits and vegetables, often consuming several hundred grams at each meal. They demonstrably avoided more calorie-dense options like steak, pasta, and cream, resulting in a 57% increase in overall food weight consumed.
Fruits and Vegetables Fill Critical Nutrient Gaps
Researchers also assessed the nutritional value of the diets. They discovered that the abundance of fruits and vegetables provided essential vitamins and minerals that would have been lacking in a diet solely reliant on higher-calorie whole foods.
“Had participants eaten only the calorie-rich foods, our findings showed they would have fallen short on several essential vitamins and minerals and eventually developed micronutrient insufficiencies,” explained a study co-author. “Those micronutrient gaps were filled by lower calorie fruits and vegetables.”
This behavior, the researchers propose, is driven by a process they’ve termed “micronutrient deleveraging.” Essentially, individuals appear to prioritize foods rich in vitamins and minerals, even if it means reducing their intake of energy-dense alternatives. .
The Impact of Ultra-Processed Foods
In contrast, ultra-processed foods yielded a different outcome. While often labeled as providing “empty calories,” the study found they can meet micronutrient needs, largely due to vitamin fortification. For instance, calorie-rich foods like French toast sticks and pancakes were identified as significant sources of vitamin A – a nutrient primarily obtained from carrots and spinach in the unprocessed diet, which contain far fewer calories.
“This raises the alarming possibility that UPFs deliver both high energy and micronutrients in one hit, which could result in calorie overload, because they effectively kill the beneficial trade-off between calories and micronutrients,” cautioned a senior research associate. She added that whole foods restore this balance by fostering competition between nutrient-rich, lower-calorie foods and higher-energy options, steering individuals toward fruits and vegetables instead of pasta and meat.
Beyond Overeating: A Shift in Dietary Decision-Making
The findings offer valuable insight into how the widespread consumption of highly processed foods may influence behavior and decision-making. According to the researchers, the core issue may not be simply overeating.
“Overeating is not necessarily the core problem,” stated a professor of experimental psychology. “Indeed, our research clearly demonstrated consumers on a wholefood diet actually ate far more than those on a processed food one. But the nutritional make-up of food is influencing choices and it seems that UPFs are nudging people towards higher calorie options, which even in much lower quantities are likely to result in excess energy intake and in turn fuel obesity.”
Related research from the University of Bristol has demonstrated that even minor adjustments can impact dietary choices. A separate study revealed that simply altering the order of meals on a menu – prioritizing healthier, more environmentally friendly options – led to increased selection of those choices.
The research was supported by the National Institute for Health and Care Research (NIHR) Bristol Biomedical Research Centre (Bristol BRC), highlighting the importance of continued investigation into the complex relationship between food, nutrition, and human behavior.
