Today we are going to the market to be inspired by the season products that allow us to prepare a very healthy and very simple and quick dish, where two seasonal vegetables loaded with nutrients shine: peas and fresh tender broad beans.

And curiously both vegetables are also legumes, although in their fresh format we do not consider them, gastronomically, as such. We can find them fresh in their pods, which will keep us entertained for a while at home emptying them, or already unsheathed ready to cook.

The preparation is very simple, starting with a light sauce based on tender chives and garlic, letting them poach in their own sugars without haste, and then adding a few shrimp or prawn tails that will add flavor and protein to the dish, which can also be frozen. Broad beans and peas cook very quickly, and in fact they are so tender fresh that they are also delicious raw.

Finely chop the onion and slice or mince the garlic, both peeled. Heat a little oil in a saucepan and fry the chives with a pinch of salt, covering the container, over medium-low heat so that they poach without toasting. When it has color, add the garlic and stir so that it does not burn. Continue cooking until the onion is very tender and has reduced.

Add the peeled prawns or prawns, even directly frozen – raising the heat after rinsing them with water, stirring them a few times so that they take on color and pouring in the wine. When the alcohol evaporates, add the beans and peas, the saffron and a little water, black pepper and stir.

Lower the heat and let it cook, covered, for a few minutes until the vegetables are cooked but without overdoing it, making sure that they maintain their intense green color. Adjust salt and pepper and serve.

What to accompany the pea and broad bean casserole with shrimp

With these quantities we get a good individual portion that will make up the food together with a light salad or fruit for dessert and some good bread, or a dinner to which we arrive with a lot of appetite. We can also add hard-boiled or poached eggs, or replace the shrimp with clams, some toasted pine nuts or diced tofu.
