The Government of Mexico City (CDMX), headed by Marti Batresannounced this Thursday, October 3, 2024 that he pulque was declared intangible cultural heritage in the country’s capital.

According to the head of government of CDMX, the decree it was already published in an evening edition of the Official Gazette.

With this it is stipulated to “Pulque production process” as one of the intangible cultural heritage that CDMX has.

Pulque is now intangible cultural heritage in CDMX

Pulque, also known as “the drink of the gods”was declared intangible cultural heritage in CDMX.

Martí Batres stated that thanks to this appointment, CDMX recognizes the 9 of the sixteen mayoralties what They produce pulque even with the traditional way.

According to the CDMX Secretariat of Culture, the artisanal process with which pulque is made meets the necessary characteristics and elements to be named as Capital Cultural Heritage.

This is because the traditional way of production still carries out ancestral steps in the handling of the maguey, as well as during the fermentation process of the aguamiel.

They indicated that these also have been passed down from generation to generationso it provides an identity to the families and communities that still carry out this practice with more than 2 thousand years old.

The Secretariat of Culture of the CDMX highlighted that in addition to the ancestral knowledge required to prepare pulquevarious actors participate in an important way so that this can be carried out.

According to the agency, at least 4 important actors to obtain pulque, which are:

  1. Tlachiquero: Person who scrapes the cajete of the maguey, extracts the aguamiel and transports it to the tinacal where the pulque is fermented.
  2. Valedor: Person who scrapes the cajete of the maguey, extracts the mead and transports it to the tinacal where the pulque is fermented.
  3. Tinacal steward: Who is in charge of managing a tinacal, fermenting the mead for the production of pulque, and organizing the work of the tlachiqueros.
  4. Pulquero: Person in charge of the production, distribution and/or sale of pulque.

This drink with more than 2,500 years of history was considered by some Mesoamerican cultures as “the drink of the gods”, it was consumed in religious ceremonies by priests, warriors, elders and members of the nobility.
