Lucie Hachette has been voted the world’s best jam maker 2024. The young woman, whose jars are sold at a market in Côtes-d’Armor, reveals details of her award-winning recipes.
At the Saint-Quay-Portrieux market, in Côtes-d’Armor, she is the one talking about herself: Lucie Hachette is the new world champion of jams. Its title won last August is the pride of all residents. He displayed his medal on the label of the winning recipe: a mix of peach, apricot and passion fruit.
Lucie Hachette sells dozens of vases at every market. A Parisian will even travel twice to receive the entire order. “Since I got the title, my website has exploded”recognizes the craftswoman. Sales of his high-end product have doubled since his coronation. In her laboratory, the jam master processes seasonal fruit, such as kiwi, every day.
Its recipe is simple: 70% fruit, lemon juice and apple pectin, for only 28% sugar – compared to 55% of a classic jam.

Our region is blessed with an abundance of fresh, organic fruits, and I handpick them at their peak ripeness. Each step from the farm to the jar is executed with care, which infuses our jams with a vibrant taste that resonates with those who try them.
T.E.: That sounds incredible! Speaking of traditional methods, can you elaborate on some of the techniques you employ?
J.P.: Absolutely! One of my favorite techniques is slow cooking. Rather than opting for quick processing, I let the fruits simmer gently, allowing their natural flavors to concentrate. This method enhances the jam’s texture and richness, making it a more sensory experience for the consumer. Also, I use minimal sugar to let the fruits shine rather than overpowering their sweetness.
T.E.: It’s fascinating how much thought goes into creating something that seems so simple. Now, in your opinion, what role does local heritage play in the art of jam-making?
J.P.: Local heritage is vital. It’s not just about making jam; it’s about embodying the culture of Côtes-d’Armor. Our recipes are passed down through generations, and each jar tells a story of our local community, our agriculture, and our passion. By preserving these traditional techniques, we maintain a connection to our roots and celebrate our unique identity through flavor.
T.E.: Celebrating local culture through food is indeed powerful. You’re also known for experimenting with unique flavor combinations. Do you have any personal favorites?
J.P.: Oh, definitely! One of my favorite creations is a blend of local Brittany strawberries with a hint of black pepper and mint. The pepper adds a surprising kick that complements the sweetness of the strawberries wonderfully, and mint freshens it up beautifully. It’s a perfect balance of flavors that intrigues the palate.
T.E.: That sounds delightful! As the best jam maker in the world, what advice would you offer to aspiring artisans in the food industry?
J.P.: My advice would be to stay true to your passion and experiment fearlessly. Use high-quality, local ingredients, and don’t be afraid to infuse your personality into your creations. Also, always prioritize taste over trends. If you make something that you love, others will surely love it too.
