The Salon du chocolat opened its doors until Wednesday in Paris. Every year, a French person eats 7.3 kilos of chocolate, particularly in the form of cakes such as soft chocolate.
It’s the story of soft chocolate that appeals to everyone and for all tastes. The cake was first served to Michel Bras on the Aubrac plateau one winter evening in 1981, during very windy weather. “We were happy, everyone was chilled and Mom cooked it in a pan (…) it’s reassuring”specifies the head chef. “We discover what happens when the chocolate is opened, there is a kind of chocolate lava”he continues.
A very successful dessert
For two years, he will try to cook the dessert of his dreams. He puts a chocolate core and a cookie. “I wanted there to be a maximum of chocolate and a minimum of biscuit”maintains Michel Bras. “The kernel must not touch the bottom”, he continues. You then have to put it in the oven. The cake that will seduce the world can finally appear. You don’t have to shutter it, but rather try to imitate it. All apprentice pastry chefs try to reproduce it. The chocolate cake is in any case popular.
