Ultra-Processed Foods Linked to Increased Cancer Mortality Risk,Study Finds

A new study reveals a concerning link between diets high in ultra-processed foods and a substantially increased risk of death for cancer survivors,prompting calls for a reevaluation of dietary guidelines and public health strategies.
A 15-year follow-up study conducted by Italian researchers found that cancer survivors who consumed the most ultra-processed foods faced a 59% higher risk of succumbing to cancer and a 48% greater risk of mortality from all causes, compared to those with the lowest intake. The findings, published in the journal Cancer Epidemiology, Biomarkers & prevention, underscore the potential long-term health consequences of these industrially produced foods.
Ultra-processed foods are defined as those manufactured through extensive industrial processes and containing ingredients not typically used in home cooking – such as emulsifiers,preservatives,artificial colors,and flavors. This broad category extends beyond obvious culprits like soft drinks, processed meats, and packaged snacks to include items like pre-made sauces, instant noodles, and even some breakfast cereals.
“We’ve known for a while that ultra-processed foods are linked to obesity, heart disease, and diabetes,” explained Professor David Labbé, a scientist in the cancer research program at the research Institute of the McGill University Health Center. “Now ther is evidence that there is an increased risk of dying, either from cancer or other causes.”
Potential Biases and Underlying Health
Professor Labbé cautioned that the study results could be influenced by selection bias. He suggested that individuals in poorer health may be more likely to consume ultra-processed foods due to factors such as limited cooking ability, aggressive cancer treatment, or a lack of access to healthier ingredients. “Perhaps these are patients in less good shape,” he stated. “Perhaps this is why they consume more ultra-processed foods.”
The researchers also noted that substances used in industrial food processing can interfere with metabolic processes, disrupt the gut microbiota, and promote inflammation. Even foods with seemingly comparable nutritional profiles to minimally processed alternatives may have a more harmful impact on the body.
A Call for Action: Parallels to Tobacco regulation
Despite the remaining uncertainties, Professor Labbé believes there is sufficient evidence to warrant a societal shift away from ultra-processed foods. He drew a parallel to the regulation of tobacco, noting that action was taken to reduce smoking even before the specific chemical compounds responsible for lung cancer were fully identified.
“It’s a bit like cigarettes,” he said. “We did not know exactly which chemical compound could increase the risk of lung cancer in smokers, but that did not prevent us from starting to legislate, then adopting regulations and laws to regulate and reduce smoking.”
Understanding the NOVA Classification
The Italian study utilized the NOVA food classification system, which categorizes foods into four groups: minimally or unprocessed foods (green); processed culinary ingredients (yellow); processed foods (orange); and ultra-processed foods (red). While not widely known in Quebec, the NOVA classification has demonstrated effectiveness in studies related to weight loss and the management of conditions like diabetes.
Professor Labbé emphasized that while preventing cancer entirely may not be possible, reducing the risk of developing it – and improving outcomes for survivors – is achievable through dietary changes. He urged limiting the consumption of foods high in added sugars, processed meats, and sugary soft drinks.
Ultimately, Professor Labbé believes that, even without a complete understanding of the underlying mechanisms, “there is enough smoke to say that we should, as individuals and as a society, start to make choices or support people to get them to abandon ultra-processed foods.”
