Time.news – Cold filtration is a method that is already a trend, also used for the pressing of oil, the extraction of fruit juices or cold brews in the world of coffee. The cold filtration process takes place at the end of the maturation of the beer and together they are used to eliminate by precipitation and filtration some substances and the yeast left in suspension, thus making the beer more “ clean ”. The lower the temperature, the more effective this process is. In the case of the Cold Filtered Birra Moretti this process takes place at a temperature of -1 ° C thus helping to obtain a remarkable organoleptic cleanliness.

Birra Moretti has just placed on the market a lager with a moderate alcohol content (4.3%) derived from a cold filtration process, thanks to which the beer is brought down to -1 before passing the filter, to best enhance its features. Temperature is an important agent, responsible for the “cleaning” of the beer both in the maturation and filtration phase.

The design is different from the other beers of the house: a transparent glass bottle with a new format: 55 cl for large-scale distribution and 30 cl for restaurants, hotels and bars.

The new Moretti cold filtered recipe involves the use of two different hops. On the one hand, a hop, added at the beginning of boiling to give this beer a delicate bitterness and on the other, a hop rich in essential oils, added at the end of boiling to give a particularly floral scent.

It has a bright, luminous straw-yellow color. It is a beer that has a great aroma and freshness on the nose, in which elegant herbaceous notes and white flowers are perceived. On the palate it is soft and full, with a delicate bitter note that gives balance and taste depth. It is very easy to drink, while maintaining structure and body given by a special process specially created to obtain a rich taste.

Create a good harmony with dishes with balanced and delicate flavors. Therefore ideal to combine with pasta with white sauces based on fish and vegetables (for example, the classic zucchini and shrimp), Mediterranean salads (with chicken, eggs, tuna, etc.), focaccia with soft cheeses, then dishes that they are tasty but not particularly intense. It has a good fizziness and creaminess, which allows it to degrease, with a structure and balance that do not mask the dish. As for desserts, it goes well for example with fruit tart.

Birra Moretti has decided to have an ad hoc produced a flint glass, achromatic and transparent, specially treated. In this way, protection from UV rays equivalent to that of a green glass is guaranteed but, being the bottle transparent, it allows you to immediately admire the product, while preserving its stability. Without proper treatment, glass is not suitable for protecting beer from one of its main enemies, light: when UV rays hit the drink, they trigger a reaction in the molecules present in the beer, altering its aroma.
