I used to work in a baseball park concession stand. The short answer is not to order anything, but if you absolutely must buy something, don’t buy hot dogs.

They came out okay out of the package and might even be edible after we grilled them – then they went into the water. We kept three pans of water at the back of the grill, which contained the hot dogs. Any hot dogs left at the end of the day went back to the fridge and reappeared the next day. Me and the other cook put our feet up to throw out the water and the old hot dogs after two full days, but the management wouldn’t let us in.
Oh, and our freezer broke, so all the meat was kept in the ice bin. And our management always told us when the surprise health inspections would come, usually a week or so in advance.

Salami is undercooked. It is technically a raw product. In production, good bacteria are added that lower the pH * to a point that harmful bacteria such as e. coli and listeria cannot survive, making it safe to eat. Not to mention the cool mold that grows on the sheath to protect it from dying too much. Very neat. (Meat Science major, we make salami and other meat products on campus in a small meat lab)
