Add the carrot, stir around, salt slightly and add the rest of the vegetables that we use and the broth or water. Bring to a boil, lower the heat and let it cook without simmering for about 10-15 minutes. Incorporate at the end coconut milk or cream and keep cooking until everything is to taste.

While the curry is cooking, prepare the quinoa in the microwave as explained in DAP.
