The best traditional panettone in the world, not from Milan but from Salento. In fact, the pastry chef Federico Perrone, owner of the “Giuri’ss” of Campi Salentina, winner of the gold medal in the “Classics” category, got on the top step of the podium in the world championship of the well-known Italian Christmas cake. The Fipgc, the International Federation of Pastry, Ice Cream and Chocolate, has recognized its panettone with candied fruit and raisins as the “best panettone in the world 2021”. The finals of the world championships were held in Rome and nearly 300 pastry chefs participated, from all over Europe but also from China, Japan, South Korea and the United States of America. “After two silvers and many tests, we managed to conquer the gold and create the perfect baker” declares Perrone satisfied. In the same category, two other Salento pastry chefs were also on the podium: Mauro Cappa, from the “Carmelino” pastry shop in Lecce, won the silver medal; Salvatore Prato, of “Il Golosone” of Novoli, the bronze one.
