For an 8-portion cake you will need: 170 grams of banana ripe peeled and cut into pieces, two egg, two tablespoons of peanut butter, 100 grams of ground almond and 25 grams of protein powder vanilla or neutral flavor; We can also add 6 grams of impeller or chemical yeast To favor the sponginess of the cake and as a flavor, we can add vanilla, citrus peel, ground cinnamon or others.
We will start by preheating the oven to 160ºC with air or 175ºC with up and down heating.
We cut the bananas and mash with a fork along with eggs, peanut butter and flavorings. If they are a little hard we can also use a kitchen motor or a mixer to blend them directly.
Add the rest of the ingredients and we mix with some chopsticks untill you obtain a homogeneous mass and then pour it into a plum cake-type mold lined with non-stick baking paper, about 20 cm long, and if we wish we can add seeds or nuts on top.
We cook for about 25 or 30 minutes, or until a toothpick inserted into the center comes out clean. Wait outside the oven before turning out and leave to cool on a rack so that it does not get wet.
