Eating vegan is not boring if we add a little creativity and variety to our daily menus. Using wheat tortillas typical of Mexican cuisine, better in their whole grain version, we can make healthy fajitas or some all-vegetable wraps with homemade filling and rich in protein.

Textured soy is perfect for this type of dishes that will also appeal to those who are not vegan or vegetarian; It is enough to rehydrate it for a few minutes so that when you add it to the pan it takes on the flavors that we add, making sure that toast and brown so that it does not have a rubbery texture when serving. Using a ready-made spice seasoning, such as for fajitas or even chicken, we can easily give it a fabulous flavor.

Cover the textured soy with water, vegetable broth or water from rehydrating dried mushrooms – if we have saved from another previous preparation – and set aside. Finely chop the spring onion and grate the garlic clove.

Heat a little oil in a frying pan and add the spring onion with a pinch of salt. Poach over low heat so that it does not toast, until it reduces a little and begins to become transparent. Add the garlic and tomato concentrate, stir and add a good amount of ground spices to taste, for example a mix for fajitas or a special one for barbecues.

Sauté gently for a few minutes; Drain the soy very well and add it to the pan, stirring well and raising the heat. Add a splash of soy sauce, a little more spices and salt and pepper, be careful with the salt if the soy sauce is very salty. Sauté for a few more minutes.

Assemble the wraps with a base of green leaf mix, add portions of soy and top with freshly cut avocado. Garnish with lime juice and chopped cilantro leaves.

What to accompany the wraps with

We can add to the filling of the wraps pickled or fresh red onion cut finely, a few diced tomato or pickles, if we like them, and also a little yogurt sauce or its vegetable version. As a garnish, a good option is baked sweet potato.
