VieCuri, a medical facility renowned for its commitment to patient well-being, has taken an innovative step to address the nutritional needs of patients with chewing and swallowing difficulties. Recognizing the limitations of current options, VieCuri colleagues have developed a range of food alternatives, including a unique “pudding sandwich” that aims to improve the taste experience for patients.

Patients with chewing and swallowing difficulties, such as frail elderly individuals, stroke survivors, and those with dementia, often find their hot meals pureed, resulting in a lackluster taste experience. Moreover, common alternatives like cottage cheese, custard, and fruit mousse are high in sugars, which can be detrimental to patients with diabetes. This situation poses risks to patients’ overall health and recovery, potentially leading to complications and extended hospital stays.

Evelien Peeters, a neurology nurse at the Brain Care Unit within VieCuri, identified the need for change. “Most people don’t consume custard and cottage cheese regularly at home,” Peeters explained. “We provided these options because there were few alternatives available. However, the high sugar content necessitated insulin for diabetic patients, which was far from ideal. We knew we had to offer something better.”

Together with speech therapist Laura Jacobs, Peeters embarked on a mission to find savory, sugar-free alternatives that were both affordable and visually appealing. Their project team, consisting of nursing and speech therapy professionals, dieticians, nutrition assistants, cooks, and food services, worked collaboratively to develop a wider range of options.

The team began experimenting by cooking, tasting, and testing various dishes in an effort to mimic “normal food” as closely as possible. With the help of VieCuri’s chefs and collaboration with suppliers, they introduced the innovative “pudding sandwich.” Resembling a traditional sandwich in both shape and taste, the pudding sandwich offers patients the ability to customize it with toppings such as vegetable spread, pâté, cheese spread, or sugar-free jam. Additionally, the team has also created other appetizing options, including a tasty main course soup, pasta bolognese, and bami.

Speech therapists determine the appropriate nutritional consistency for each patient, while dietitians provide guidance on product choices. This expanded range of options has not only made eating more enjoyable for patients but is also expected to contribute to faster recovery and reduced insulin requirements.

VieCuri’s innovative approach to improving nutrition for patients with chewing and swallowing difficulties not only enhances their quality of life during their hospital stay but also supports their overall recovery process. By addressing the limitations of existing options and offering a wider range of savory and sugar-free alternatives, VieCuri demonstrates its commitment to patient well-being and innovation in healthcare.
