Always the question at the asparagus season: Which wine goes with it?

The most common and certainly correct recommendation are “softer” Burgundy white wines: Pinot Blanc and Pinot Gris.

That’s all well and good, but it can also be crazier! For example with traditional grape varieties that are suddenly being rediscovered – or even with rosé wine.
