Hila Biderman, star of Master Chef, who specializes in Mediterranean cuisine with an emphasis on Greek cuisine, reveals a recipe for making a Greek dish for entertaining at home, easy to prepare, delicious and suitable for a dairy meal: Recipe for making Salonika panja, whole beets on a bed of yogurt cream:
Ingredients:
- Beautiful beets
- Large box (750 ml) of 10% yogurt
- 4 stalks of green onion
- Crushed garlic clove
- A handful of parsley
- lemon
- Salt and pepper
- Olive oil
preparation method:
- Boil the beets in water until it becomes soft and let it cool
- Peel the beets gently, while maintaining its shape and season it with olive oil, lemon, salt and pepper.
- You can remove the flavors for at least an hour. Put the yogurt in a bowl and add the green onion, parsley and garlic very finely chopped
- Mix the resulting mixture while dripping olive oil into a bowl. Season with salt and pepper to taste.
- Add the honey and mix well.
How to serve:
- In a deep and wide bowl pour the yogurt and flatten with a spoon over the entire bowl.
- The beets are cut into deep eighths (pay attention not to the end) so that the shape of the beets is preserved and placed in the center of the soup.
- Garnish with olive oil and whole parsley leaves.
