Greek celebration: a recipe for making Salonika panja

Hila Biderman, star of Master Chef, who specializes in Mediterranean cuisine with an emphasis on Greek cuisine, reveals a recipe for making a Greek dish for entertaining at home, easy to prepare, delicious and suitable for a dairy meal: Recipe for making Salonika panja, whole beets on a bed of yogurt cream:

Ingredients:

  1. Beautiful beets
  2. Large box (750 ml) of 10% yogurt
  3. 4 stalks of green onion
  4. Crushed garlic clove
  5. A handful of parsley
  6. lemon
  7. Salt and pepper
  8. Olive oil

preparation method:

  1. Boil the beets in water until it becomes soft and let it cool
  2. Peel the beets gently, while maintaining its shape and season it with olive oil, lemon, salt and pepper.
  3. You can remove the flavors for at least an hour. Put the yogurt in a bowl and add the green onion, parsley and garlic very finely chopped
  4. Mix the resulting mixture while dripping olive oil into a bowl. Season with salt and pepper to taste.
  5. Add the honey and mix well.

How to serve:

  1. In a deep and wide bowl pour the yogurt and flatten with a spoon over the entire bowl.
  2. The beets are cut into deep eighths (pay attention not to the end) so that the shape of the beets is preserved and placed in the center of the soup.
  3. Garnish with olive oil and whole parsley leaves.
