A while ago the recipe for pasta chips went viral online, a very simple snack which consists of cooking pieces of pasta seasoned to taste with cheese and spices in an air fryer. In this version we give it a healthier twist using legume flour pasta that also adapts to vegan and gluten-free diets.

We saw the idea from Patricia Ortega and it didn’t take us long to put it into practice using the conventional oven with excellent results, although they will be even better if you use a air fryer to obtain a crispier texture.

In our case we have chosen red lentil flour pasta, but you can use another type that you like or try different varieties, for example chickpea or pea. Thus we have a snack with fewer refined carbohydrates, richer in proteins vegetables and fiber, gluten-free and, by using nutritional yeast, you can do without cheese.

Boil the legume pasta in plenty of salted water and cook according to the instructions. manufacturer’s instructions, usually about ten minutes. Drain well, shaking the colander so that excess water is released without the pieces sticking; If this happens, stir with clean hands adding cold water or a splash of oil.

Place in a bowl and add a little olive oil, stirring well (optional), and season with a mixture of spices to taste, generously and stirring very well so that everything is coated. Add a couple of generous teaspoons of brewer’s yeast, black pepper and stir again.

Cook in the air fryer in batches, if necessary, for about 8-10 minutes at 200ºC, stirring a little halfway through cooking, or in the oven preheated to the same temperature, on a tray with non-stick paper, for about 10 -15 minutes, until they are golden brown but without burning.
